Cooking with Kindness: Matcha donuts

Makes 4 donuts per serving


Ingredients
Dry
½ cup almond flour (or substitute ½ cup of vegan protein powder – highly recommended!)
½ cup GF oat flour
1 tsp. baking powder
½ tsp. ground cinnamon
Dash of salt

Wet
¼ cup of unsweetened almond milk (use less if using oat milk)
¼ cup maple syrup
1 egg (or flax egg)
1 tsp. vanilla extract
1 Tbsp. coconut oil
Coconut oil spray

Matcha Glaze
½ cup of alternative yogurt of your choice (cashew is lovely!)
1 tsp. matcha (or as much as you want for taste)

Directions

• Preheat over to 350 degrees
• In a large bowl, combine all dry ingredients and mix
• In a medium bowl, combine all wet ingredients and mix well. Then, add the wet ingredients to the dry and mix well to make batter
• Spray donut pan with coconut oil and add batter
• Bake for 15-20 minutes
• In the meantime, make the glaze by mixing the ingredients in a small bowl
• Allow donuts to completely cool
• Dip donuts in glaze
• Turn into an energized, revitalized student
• Recommended: Top with cinnamon, coconut flakes, or both. Consume with caffeine beverage of choice
